
Combine and serve chilled with rice and curry (serves 4)
- 1 carrot grated
- 1/2 medium sized red onion chopped finely
- 1 tsp fresh ginger finely grated
- slice green or red chillies (dependent on how hot you want your sambol)
- 1 medium lime or lemon juiced
- salt and pepper to taste
- 1 cup yoghurt (obvs skip for dairy free version)
- 1 red tomato chopped
